Since 1924 It all began in 1924, when what is now Europe's largest monastery cheese dairy was founded by Brother Leonhard on St. James' Day, July 25th. Specializing in the production of soft and semi-hard cheese, the Schlierbach monastery cheese dairy, in the heart of Upper Austria, is today the market leader in the soft cheese segment with red culture. Hearty organic cheese specialties have been produced since 1999. In 2008, our master cheesemakers started producing cheese specialties from sheep and goat milk. The organic range of the Klosterkäserei Schlierbach has been expanded and a new focus has been created. With the conversion to a purely organic operation in 2012, we guarantee that our customers will continue to have access to regional food of the highest quality in the future. Through many years of intensive cooperation with our organic farmers, we ensure that the farms are preserved for the next generation.

We have been producing organic sheep cheese specialties in Schlierbach since 2008, which delight with their pleasantly subtle sheep note. Our cheese lovers and gastronomy appreciate the mild, unobtrusive taste. Those who are allergic to cow's milk will also find the perfect alternative for enjoying cheese.
